Just a side note: I was impatient, wanting to assemble my volcanoes before they were completely frozen. For best results, allow 24 hours in the freezer.
What You Need
1 1/2 quart chocolate ice cream
3 cups crumbled brownies
1 can whipped cream
1/2 cup red candy melt wafers
1/4 cup yellow candy melt wafers
6 martini glasses (I used plastic martini glasses)

How-To
Step 1
In a bowl, mix together the chocolate ice cream and the crumbled brownies. Spoon and spread evenly into plastic martini glasses. Place in freezer and allow them to harden for at least 4 hours.
Step 2
Using a knife, loosen the ice cream volcanoes from the sides of the martini glasses and place them on a parchment-lined baking sheet.
Step 3
Widen the tops with a knife to form the openings of the volcanoes. Put them back in the freezer for 12-24 hours.
Step 4
Meanwhile, place a sheet of parchment paper on a baking sheet and squirt dollops of whipped cream to make the volcano ash clouds. Keep these in the freezer until you are ready to assemble the volcanoes.
Step 5
To make the lava, melt the red and yellow candy melt wafers in separate microwave-safe dishes. Heat for 30-second intervals, and stir until smooth. Pour into plastic squeeze bottles. Remove the ice cream volcanoes from the freezer and pour red & yellow candy melt over the tops, creating the desired lava effect.
Step 6
Place the frozen, whipped-cream ash clouds on toothpicks and insert them into the tops of the volcanoes. Put the ice cream volcanoes back into the freezer until you are ready to serve.
Step 7
For an extra-special Valentine’s message, write “I lava you!” on your serving plate with red candy melt. Place the ice cream volcano next to your message using a metal spatula.
